Yummy Gluten Free Coconut Pancakes! A healthy breakfast idea.

So many readers ask me what is a good healthy option to eat for breakfast.

Here you go…This is perfect for the weekend when you have time to make these.

And frankly, every one of us can benefit from avoiding typical flour-based items.

A way to make your recipes gluten free is to simply replace the common, less desirable white or wheat flour with gluten free coconut flour.

This recipe also calls for coconut milk and coconut oil.

FYI, these items can be found at your local health food store, or at a Whole Foods market.

If this does not work for you, then go online to search for a local farmers market to see if they have any of these products. People at the farmers market can perhaps direct you to a local source since they tend to eat healthfully.

Of course, you can go online to find many good sources from which you can purchase these products.

Please be sure to purchase certified organic if possible. Or at least make sure the label says organic.

What you need:
4 eggs (organic pastured)
1/4 cup coconut flour
1/4 tsp vanilla extract
1 pinch nutmeg
1 pinch cinnamon
1 tbsp honey, (try to use an organic kind)
1/4 cup full fat coconut milk, (don’t get the light version)
How to make…
Mix all ingredients and let them sit for five minutes. Oil or grease up your pan (I used coconut oil but you can also use butter) and heat over medium heat. Pour about a 1/4 cup of batter for each pancake, allowing each side to brown before flipping it. (Watch it carefully so it doesn’t burn.)

    WOW !!
    What fabulous pancakes these are ! I used a tiny bit of real maple syrup, no butter, and they were scrumptious.
    What do I do with Thanksgiving Dinner now? I’m not hungry after these Yummy pancakes…
