2-Ingredient Gluten-free Pancake Recipe

If you’re like me, recipes must be quick and easy…

(after it passes the healthy test)

…and 2-ingredient anything is ideal…right?

Check this amazing gluten-free pancake recipe that only has two ingredients…

…and you likely have these items in your kitchen right now.

BTW, I got this particular gluten-free recipe from a teen-aged girl named Izy…

She lives in London… and she has a cool

healthy food blog and is an utter delight.

As you know, I’m writing a Kindle book on gluten-free eating and I will definitely include this recipe and of course, give her credit.

So, try this 2-ingredient pancake recipe.

All you need is a large banana, and 2 eggs. Easy breezy!

Easy Breezy 2-ingredient Pancakes (gluten, grain and dairy free, and no added sugar)

Notes:

You can blend this or use a mixer for a super smooth batter, or simply mash the banana. Plus, feel free to add any extras like cinnamon, coconut flakes, chopped nuts, baking powder, and even super dark chocolate!

Eggs-and-banana_thumbBasic Batter:

You need 1 large ripe banana, mashed (this renders around 1/3 to 1/2 cup when mashed)

2 eggs (use pastured organic)

Optional add ins:

  • Add a pinch of sea salt (for me, sea salt is not optional)
  • If you want fluffy pancakes, use 1/8 tsp. baking powder
  • 1/4 tsp. ground cinnamon (my personal favorite)
  • 1/4 cup blueberries/ raspberries/ chopped nuts or unsweetened coconut flakes
  • 2 tbsp. dark mini chocolate chips

What to do:

Peel and mash the banana, then stir or whip in the eggs. Mix in any non-chunky add ins that you want (e.g. sea salt, cinnamon, or baking powder).

Then, heat a skillet and add a little organic butter, or coconut oil. Turn the heat down to medium-low.

Then you want to spoon in a circle of batter into the pan (Izy recommends about 1 or 2 tbsp. of batter per pancake).

Cook until golden brown on the underside (around 1 minute) sprinkle on any chunky ingredients (e.g. chocolate chips, fruit, nuts, coconut flakes, if using), then use a metal spatula to flip and cook until golden brown on the other side (30 seconds to 1 minute).

Now, like Izy says: “Serve warm with whatever the heck you want”.

    These look delicious! And I love the simplicity of only 2 basic ingredients! Like you I will use sea salt. Likely I also will use cinnamon, vanilla, and baking powder. Thanks!
