Here’s Something To Crave…

Hey, if you are craving more salads and veggies this time of year, I’m with you.

Actually, I’ve been eating much more plant-based these days.

What does “plant-based” really mean?

Well, of course, lots of veggies, more fruit, nuts and seeds, and so much more…

I’ll talk more about this next time.

For today…

If you want a uniquely delicious, yummy, and off-the-charts healthy salad dressing, try the one below.

BTW, I got the recipe from the interesting Dr. Michael Greger’s blog.

Hint: If you google Dr. Michael Greger you’ll see where I’m going with my diet these days.

Super Salad with Garlic Caesar Dressing & Hemp Hearts

Servings: 4 servings

Ingredients

Dressing

  • 2 cloves garlic crushed
  • 2 tablespoons nutritional yeast
  • 1 tablespoon almond butter
  • 1 tablespoon blended peeled lemon
  • 1 tablespoon white miso paste
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon salt-free stone-ground mustard (or prepared horseradish, yum!)
  • 1/4 inch grated turmeric or 1/4 tsp ground
  • 1 teaspoon Savory Spice Blend of your choice

Salad

  • 1 head romaine lettuce torn into pieces
  • 1 bunch watercress or 2 cups baby spinach stemmed and chopped
  • 1 cup cherry or grape tomatoes halved
  • 1 carrot shredded
  • 3 tablespoons hulled hemp seeds (hemp hearts)

Instructions

Dressing

In a blender, combine ½ cup of water with all the dressing ingredients and blend until smooth. Taste and adjust the seasoning to your liking. Set aside.

Salad

In a large bowl, combine all the salad ingredients, toss lightly with the dressing, and serve.
