Gluten-free Pumpkin Cupcakes

Makes 12 cupcakes. Super easy!


Cupcake Ingredients:pumpkin-slice-main

1. 1 cup pumpkin puree
2. 1 cup almond butter
3. 1/2 cup raw honey (or 20 drops of liquid stevia)
4. 2 organic eggs
5. 1 1/2 tsp baking powder
6. 1/2 tsp baking soda
7. 1 tsp vanilla extract (get pure organic extract)
8. 1 tsp cinnamon
9. 1/4 tsp nutmeg
10. 1/4 tsp cloves


Icing Ingredients:

1. 1/4 cup coconut butter
2. 1/4 cup coconut oil
3. 1/4 cup raw honey
4. 1 tsp cinnamon


Easy Directions for Cupcakes:

Preheat your oven to 350ºF.

First, in a medium sized bowl, combine all the cupcake ingredients (the first 10 ingredients) and mix thoroughly to combine. Pour into a muffin tin (should make about 12 cupcakes). Bake until completely cooked through, about 30 minutes. You can check that by inserting a toothpick or knife into the middle of a cupcake.


Easy Icing Instructions:

In a mixing bowl, combine the last 4 ingredients, Beat the ingredients until they’re fluffy (use a mixing blade attachment or a whisk).


Caution: Let the cupcakes cool. Don’t put the icing on the cupcakes until they are completely cooled, otherwise they will turn into a messy goop.

Use a small offset spatula or a spoon and drizzle the icing over the top.

These cuties are delicious, healthy, and they will satisfy your sweet tooth, and you will not get fat or sick after Thanksgiving, ideal with a cup of a healthy tea like green or chamomile.
